Any recommendations?

UK/Ireland based with French flat/jumps and American flat ideally

The default uk schedule gives access to Irish races and a few of the French in addition to Japan, Dubai and Hong Kong. But not the us races. If you're wanting access to all you'll need to build a custom schedule to introduce the races you want access too

Cheers, how exactly do you build your own?

Not really an expert on that, I have only started to dabble with it, but from your menu there is an option on schedules, the interface seems reasonably intuative. Or you can edit at file level but on that I am not the chap to ask.
