Best I can tell about progression is you get some during their first few races as a 2yo flat and 3yo jump, though some will make zero progression regardless. The 2yo flat progress again as they turn 3yo and then generally with each age progression up to the point the horse reaches peak maturing for racing and then the yearly cycles will see them getting worse in terms of potential, they may age to be better jumpers.
You can augment this with agility , break or jumps and with speed and stamina focuses though it is not easy to say how effective this is, I seem to find it is different from horse to horse, some make real improvement some don't, nothing is fixed.
Gallops do not mess about with too much, I use the three 'lot' blue Amber red method mostly to attain fitness or a skill and focus depending on what I'm doing with them, so my 1yo flats tend to stay Amber all year with a speed or stamina focus, my jumps game they are all schooled over onstacles when not old enough to race etc.
Not sure how effective they are to manually attain fitness or even if this is the intention, as Amber or red usually leads to sickness injury, but when a horse is fit and if I am not racing them I have used to get and idea where they like to run and how they measure against others in their breeding class, though it does not reflect race speed from what I see, so if their is something more to this I am missing it also
