 Jockey Control mode? I feel really stupid but I honestly can't figure it out. I was reading the instructions and now I want to try it but i have no idea how to enable it?
Is it specifically UK only?

No. On the race instructions for your horse select 'take the reins' Try on the flat first, the jumps are really difficult.
