Just a quick one....

If I transfer out a horse of my game at the end of a season, is it gone from that game permanently?

Or do I keep it in the original game as well as in the game pool?

Its gone, but if you play until a couple of days before the end of the season,
then save your game, go back into your game and select 'retire to game pool',
you then play into the new year(the horse will be gone), however if you then press CTRL ALT DEL and close the game through the task manager you can play from your last save point, your horse will be still in your game and it will be in the game pool.
I must stress that you do not save when you get into the new year before you CTRL ALT DEL
