Not sure, never tried it, I know its possible at the start of a new game before the first season.

I think he just means that he has skipped the video to the end of the season to save people watching you tube for hours on end, not the actual game. I could be wrong though.

You can skip season when you start a new game, but not mid-game. I expect PJ means he rushed through to the end of the season to get to the next one to see what the next crop of youngsters are like or to transfer a horse. You have to do it by skipping days/months though, there is not setting to do it for you.

You need to enter horse in race as far forward as you can, then withdraw day before race.
You need to do this a few times to skip through a season.
I don't know any other way.
